Welp.

Apparently when I mentioned in last week’s Weekly Wednesday Wish List that Mr. ERH’s prayers for snow had been answered with a couple of inches…God decided to keep listening.

Because now?

We are buried.

Winter Storm Fern absolutely whalloped our area (we live about 30 miles south of Boston), dumping close to two feet of snow and turning everything outside into a winter wonderland.

The kind that’s beautiful to look at, as long as you’re inside.

In your slippers.

With the heat on full blast.

Needless to say, I’ll be leaning all the way into cozy this week with lots of comfort food on the menu and decorating that doesn’t require leaving the house.

If I’m being completely honest, I’m not that mad about it.

Oh, and we might have another winter storm headed our way this weekend.

I think I need to talk to Mr. ERH about his prayers.

9. CULINARY CORNER: Winter Minestrone Soup: Heat 2 tablespoons olive oil in a large pot over medium heat. Add 1 large chopped onion, 2 diced carrots, 2 diced celery stalks, and 4 minced garlic cloves, and cook 8 to 10 minutes until softened. Add 1 (28-ounce) can diced tomatoes with juice and 6 cups chicken stock (or vegetable stock). Bring to a boil, then reduce heat to low. Add 1 Parmesan rind (optional) and simmer 20 minutes. Stir in 1 (15-ounce) can cannellini beans, drained and rinsed, 1 cup ditalini pasta, and 2 cups chopped fresh spinach, and simmer 10 minutes until pasta is al dente. Season with salt and pepper to taste, remove Parmesan rind, and serve garnished with grated Parmesan cheese, chopped fresh parsley, and a drizzle of olive oil.

I’ve used the same ones for years in my Christmas, Valentine, and patriotic decorating. They add a pop of color, feel classic and cozy, and work for way more seasons than you might imagine.

1. FAVORITE STYLING MOMENT: There are still a few things to do, but I am in love with how the breakfast nook in my kitchen is coming together. With the addition of some cabinetry and a little construction (to build the soffit), this space went from being a big blank wall at the end of my kitchen, to a cozy place to gather around the table.
