Helpful Tips
- You can use any pesto you love, but the bright flavor of parsley pesto pairs especially well with roasted tomatoes.
- Don’t skip the pasta cooking water, it’s the secret to getting that luscious, restaurant worthy texture in your sauce.
- Start with a little pasta water and add more as needed. If the pasta looks too dry, a splash more of the reserved water will help bring everything together.
- Feel free to add grilled chicken or shrimp on top for extra protein.
Can I use store-bought pesto instead of homemade?
100%!
If you’re short on time, store bought pesto can be a great alternative.
I will say…homemade pesto sauce is extremely easy to make and you control the ingredients.

A twist on the classic basil pesto, this parsley pesto recipe combines fresh flat leaf parsley, toasted pine nuts, and parmesan cheese for a bright, flavorful sauce.
Can I use other types of pasta to make this dish?
Yes, this recipe is extremely verstaile.
Angel hair pasta definitely gives this dish a light, delicate feel however, spaghetti, linguine, or even short cut pasta like cavatappi will work just fine.
Just make sure to adjust the pasta cooking time.
What if I don’t have cherry tomatoes?
You can substitute grape tomatoes or even chopped roma tomatoes.
I would just try to keep the pieces bite sized so they roast evenly.

Can I make this pasta dish ahead of time?
You could, but I don’t recommend it.
This dish is best served fresh.
That said, you could prepare the pesto and roast the tomatoes in advance.
When you’re ready to eat, just cook the pasta and toss everything together.

What is the best way to store leftovers?
Store any leftover pasta in an airtight container in the refrigerator for up to 2 days.
Angel hair is a delicate pasta so it can dry out quickly.
I recommend adding a splash of water or olive oil before reheating to help loosen things up.
