Avocado Chicken Salad

Ready in just 15 minutes, this healthy and creamy avocado chicken salad is made without mayo or yogurt just ripe avocados, shredded rotisserie chicken, and a handful of simple ingredients. It's great for sandwiches, wraps, or lettuce cups, and makes a delicious lunch or light dinner.

Ingredients
  

  • 1 Rotisserie Chicken meat removed from the bones & shredded
  • 3 Medium Ripe Avocados or 2 Large peeled & pitted
  • 1/4 cup Red Onion minced
  • 2 tbsp Lime Juice
  • 1 tbsp Olive Oil
  • Kosher Salt & Black Pepper to taste

Instructions
 

  • In a large bowl, place the peeled and pitted avocados. Add lime juice, olive oil, salt, and pepper. Mash until you reach your desired texture (chunky or smooth).
  • Add the shredded chicken and minced red onion to the avocado mixture. Gently stir to combine all ingredients thoroughly.
  • Spoon the salad onto croissants, sandwich bread, lettuce wraps, or serve with crackers.
  • Best enjoyed the same day. Store leftovers in an airtight container with plastic wrap directly on the surface to reduce browning. Use within 24 hours.

Notes

  • Make sure your avocados are soft to the touch but not mushy. Ripe avocados will mash easily and give the salad its creamy texture.
  • The finer you shred the chicken, the better it blends into the avocado mixture and stays on sandwiches or wraps without falling apart.
  • Don’t wait to add the lime juice. It helps prevent the avocados from browning and gives the salad a bright flavor.
  • Additional add-ins include: chopped tomato, corn, cilantro, green onions, and chopped cooked bacon.
