Spoon the salad onto croissants, sandwich bread, lettuce wraps, or serve with crackers.
Best enjoyed the same day. Store leftovers in an airtight container with plastic wrap directly on the surface to reduce browning. Use within 24 hours.
Notes
Make sure your avocados are soft to the touch but not mushy. Ripe avocados will mash easily and give the salad its creamy texture.
The finer you shred the chicken, the better it blends into the avocado mixture and stays on sandwiches or wraps without falling apart.
Don’t wait to add the lime juice. It helps prevent the avocados from browning and gives the salad a bright flavor.
Additional add-ins include: chopped tomato, corn, cilantro, green onions, and chopped cooked bacon.
