Not Your Mom's Green Bean Casserole Recipe

Ingredients
  

  • 1 tbsp Butter unsalted
  • 1 tbsp Extra Virgin Olive Oil
  • 24 oz Fresh Haricots Verts or Fresh Green Beans
  • 10.5 oz can Campbell's Cream of Mushroom Soup
  • 1/2 cup Water
  • 1 1/2 cups Shredded Cheddar Cheese
  • 1/2 can Trader Joe's Gourmet Fried Onions or French's Fried Onions
  • Salt & Pepper to taste

Instructions
 

  • Preheat oven to 375 degrees.
  • Melt olive oil and butter in a large heavy skillet over high heat. Add green beans, season with a pinch of salt & pepper, and sauté until beans begin to caramelize slightly (they will still be somewhat firm).
  • While beans are sautéing, combine cream of mushroom soup and water in a small mixing bowl to create a creamy mushroom sauce.
  • Pour the soup mixture into the pan with the beans, mix and heat through.
  • Add the green bean mixture to a small or medium sized casserole dish. Top the beans with cheese, and then the crispy onions.
  • Place baking dish in the oven and bake until cheese melts and the onions are golden brown, about 15-20 minutes. 
  • Remove the creamy green bean casserole from the oven and let it cool about 5 minutes before serving.
  • Enjoy!

Notes

  • For an added layer of flavor, sauté finely diced onions in the oil/butter until translucent before adding the green beans. The caramelized sweetness of onions will complement the creamy sauce beautifully.
  • Add sliced or chopped fresh mushrooms to the sautéed onions for a more earthy flavor to your casserole.
  • Experiment with different cheese varieties to customize the dish. Gruyere, Swiss, or even a blend of cheeses will provide a unique twist.
  • Instead of traditional crispy fried onions, try topping the casserole with a mixture of panko breadcrumbs and grated Parmesan cheese. Yum!
  • Elevate the overall taste by infusing the sauce with fresh herbs like thyme, rosemary, or parsley. A handful of freshly chopped herbs adds a burst of freshness.
  • Prepare the casserole ahead of time, stopping before the baking step. Cover and refrigerate the casserole overnight. When you're ready to serve, simply bake it in the preheated oven.
