Notes

  • Be sure to use pumpkin puree for this recipe, not pumpkin pie filling. Pumpkin pie filling has added sugar, spices, and water which will not work for this recipe.
  • The cake mix you choose will greatly influence the flavor and texture of your muffins. Opt for a high quality cake mix to ensure a delicious result. You can experiment with different flavors like spice cake mix or vanilla for varied taste profiles.
  • While these muffins are delicious with just three ingredients, feel free to get creative by adding mix-ins such as chocolate chips, chopped nuts, or dried cranberries to enhance texture and flavor.
  • When combining the ingredients, be careful not to overmix the batter. Overmixing can lead to dense and tough muffins. Stir until the ingredients are just combined to achieve a light and tender crumb.
  • For evenly sized muffins that bake uniformly, use an ice cream scoop to portion the batter into muffin cups. This also makes the process neater and more efficient.
  • Oven temperatures can vary, so test your muffins for doneness. Insert a toothpick into the center of a muffin; if it comes out clean or with a few moist crumbs, they're ready. Overbaking can result in dry muffins.
  • Let the muffins cool in the pan for a few minutes before transferring them to a wire rack. This helps prevent them from sticking to the pan and allows them to set properly.
