Easy & Delicious Copycat Chick-fil-a Cobb Salad

Ingredients
  

Salad Ingredients

  • 12 ounce Perdue Breaded Popcorn Chicken 
  • 8 cups Romaine Lettuce chopped
  • 1 can (11 ounce) Corn drained
  • 4 slices Cooked Bacon crumbled
  • 4 Hard Boiled Eggs
  • 1 cup Grape Tomatoes
  • 1/2 cup Shredded Monterey Jack & Cheddar Cheeses
  • Crispy Red Peppers

Avocado Dressing Ingredients

  • 1 large Ripe Avocado skin removed & pitted
  • 2/3 cup Greek Yogurt
  • 1 packet Dry Ranch Dressing Mix
  • 2 tbsp Olive Oil
  • Zest of 1 Lime
  • Juice of 1/2 Lime
  • 1 1/2 tbsp Apple Cider Vinegar
  • 1/2 tsp Kosher Salt
  • 1/4 tsp Ground Black Pepper
  • 2 tbsp Water

Instructions
 

  • Preheat air fryer to 425 degrees F.
  • Once preheated, add the popcorn chicken and air fry for 8-10 minutes or until crisp.
  • While the chicken cooks, make the dressing.
  • Add all of the dressing ingredients to a blender or food processor and pulse until smooth & combined.
  • Divide salad ingredients equally into 4 dishes.
  • Serve with avocado lime dressing (or any dressing of your choice) and enjoy!

Notes

  • No air fryer...No problem! Cook the popcorn chicken in a conventional oven according to the package instructions.
  • To achieve perfectly boiled eggs, place them in a pot of cold water and bring to a boil. Once water comes to a boil, remove the pot from the heat, cover, and let the eggs sit for about 10-12 minutes before transferring them to an ice bath. This method helps prevent overcooking the egg and ensures delicious creamy yolks.
  • For perfectly crispy bacon, bake in the oven on a wire rack placed over a baking sheet. This allows the bacon to cook evenly and become crispy without the need for constant flipping.
  • To save time consider using store-bought hardboiled eggs or pre-cooked bacon from your grocery store.
  • Customize the salad greens according to your preference. While romaine is the classic choice for this salad; iceberg, baby spinach, arugula, kale, or a spring mix could be used instead for added variety and nutrition.
  • Depending on your taste buds, you can adjust the consistency of the avocado dressing by adding more or less Greek yogurt or lime juice. For a thicker dressing use less liquid, and for a thinner consistency, add a splash of water or extra lime juice.
  • To prevent the avocado dressing from browning, store it in an airtight container with plastic wrap pressed directly onto the surface of the dressing to minimize air exposure.
