How to Serve Easy Avocado Chicken Salad

My favorite way to serve this chicken salad is piled high on buttery croissants.

You could also spread it on your favorite sandwich bread for a quick lunch or light dinner.

If you want a low-carb option, you can scoop it into lettuce cups or spoon it over a bed of greens for a hearty salad.

It also makes a tasty dip, just serve it with crackers, pita chips, or sliced veggies. 

NOTE: When making an avocado chicken salad sandwich, add the salad to the bread right before serving. The chicken salad will soften the bread over time especially if you’re using croissants or soft sandwich rolls. If you’re prepping ahead, store the salad and bread separately and assemble when you’re ready to eat.

How to Store Chicken Salad

Since this salad is avocado based, it’s best enjoyed the same day it’s made.

But you can, store any leftovers in an airtight container with plastic wrap pressed directly onto the surface to minimize browning.

You’ll want to enjoy this chicken salad within a day for best flavor and color.

Ingredients
  

  • 1 Rotisserie Chicken meat removed from the bones & shredded
  • 3 Medium Ripe Avocados or 2 Large peeled & pitted
  • 1/4 cup Red Onion minced
  • 2 tbsp Lime Juice
  • 1 tbsp Olive Oil
  • Kosher Salt & Black Pepper to taste

Instructions
