Roast the Tomatoes

Preheat your oven to 425 degrees Fahrenheit.

On a baking sheet, toss the cherry tomatoes with olive oil, salt, and pepper.

Roast the tomatoes in the oven for 10–15 minutes, or until they’re soft, blistered, and slightly caramelized.

Cook the Pasta

While the tomatoes are roasting, bring a large pot of salted water to a rolling boil.

Cook the angel hair pasta al dente according to package instructions (usually about 4 minutes).

Before draining, reserve a cup of the salty, starchy pasta water.

Toss it all Together

Back into the same pot, add the cooked pasta and pesto.

Gradually pour in the reserved pasta water, a bit at a time, until the pesto coats the pasta evenly and becomes silky and smooth.

Gently fold in the roasted tomatoes.

When you’re ready to eat, just cook the pasta and toss everything together.

  • 8 oz Angel Hair Pasta
  • 1 ½ cups Cherry Tomatoes
  • 1 tbsp Extra Virgin Olive Oil
  • ¼ cup Parsley Pesto
  • 1 cup Reserved Pasta Water
  • Kosher Salt & Black Pepper to taste
  • Freshly Grated Parmesan Cheese for topping

Instructions
