And if I’m being completely honest, I was skeptical.

Add Ingredients to Blender
Add the cottage cheese, honey, vanilla, and half of the chopped strawberries to a blender.

Pour half of the mixture into a freezer-safe container. Sprinkle half of the remaining chopped strawberries over the top. Add the remaining ice cream mixture and finish with the rest of the strawberries. Seal the container and place it in the freezer overnight.

Once you have the basic cottage cheese ice cream formula down, the flavor possibilities are pretty much endless…
- Switch up the fruit. Strawberries are a classic summer choice, but blueberries, peaches, raspberries, or a mixed berry blend would work. Keep the total amount the same and you’re good to go.
- Try a different sweetener. Honey is my personal favorite, but maple syrup or agave work just as well (use the same amount). If you want a sugar-free option, a few drops of liquid stevia or a tablespoon or two of monk fruit sweetener can be swapped in.
- Add a little something extra. A teaspoon of fresh lemon or lime zest blended in adds a bright, citrusy flavor that goes well with berries. A spoonful of peanut butter or almond butter stirred into the base before freezing is also delicious.
- Make it a little more indulgent. Fold mini chocolate chips into the mixture before freezing or drizzle melted dark chocolate over the top before serving for chocolate covered strawberry goodness.

Yes. Just thaw them first and drain any excess liquid before adding them to the blender. Fresh are the way to go for the chopped strawberry layers, but frozen work great in the blended base.

Stored in a sealed container, this strawberry cottage cheese ice cream will keep for up to 2 weeks. After that it can start to get a bit icy.
Can I use a different sweetener?
Absolutely. Maple syrup works great in place of honey, same amount, same method. You could also use agave.
Is this recipe gluten free?
All four ingredients are naturally gluten free.
Can I taste the cottage cheese?
No. Once it’s blended smooth and frozen, the cottage cheese flavor completely disappears. What you’re left with is a creamy, sweet strawberry ice cream.

- 1 cup Strawberries chopped
